30 Day Shred: Day 3

I wasn't feeling well yesterday from the lack of sleep in my new weekly schedule, so I took the day off from exercise. Today I picked it back up. It was ok, I'm still pretty sore though from Tuesday & Wednesday's work outs. I'm mostly feeling it in my shoulders, calves (closer to my ankles) & thighs. I'm still overly tired and ended up almost falling asleep during the sit ups (silly me for blinking too long). I think once I catch up on sleep, it'll be better. I catch up on the weekend and then by Wednesday I'm beat.

I am feeling a little burn in my stomach area today. Not much, but a little and that's better than nothing!

No weigh in today, maybe tomorrow. Jillian says that by day 5 you should start to see/feel a difference in your endurance.... I sure hope that I do!

Wordless Wednesday

30 Day Shred: Day 2

I woke up this morning a little sore, but not too bad. Got up and started my work out. I feel like I was moving a little slower today than yesterday, but that may be because the Little Monster woke me up in the middle of the night crying. So I didn't get as much sleep as I had hoped for. I did make it through the whole video with minimal breaks. I was even able to make my jumps and lunges a little bigger/deeper. So that is a good sign! My 3lb weights felt heavier than yesterday though.

I'm definitely feeling it in my thighs & calves today - thank goodness I'm not on my feet all day! I also feel it a little in my arm pit area.

J wants to try the video when we get home this evening. I think I'm going to take a nap instead!

I haven't decided yet if I want to do the 30 day shred for the full 30 days straight yet or if I want to switch it up with a different video and alternate days. This one you're supposed to do 10 days at each of the 3 levels on the dvd. I'm going to stick with level 1 until I can do it comfortably though. The other video I want to try is Jillian's Yoga Meltdown. I love yoga, but most of the videos are way too slow paced for me. This one's supposed to be much quicker. I'd probably use it as my weekend video though because it's a little longer than this one (about 30 mins) and I don't think I'll have time to do it during the week (since I'm already waking up at 5).

30 Day Shred: Day 1

Before trying this dvd, I watched it to see what I was in store for. And it looked pretty easy! Nothing out of the ordinary, some minimal weight lifting, push ups, jumping jacks, etc. Nothing I hadn't done before, so I decided to give it a go that night. I only made it through the first 5 minutes of the 20 minute dvd!! So I turned it off and put it away for the night. I figured it was because it was late and I was tired. So, I went to bed.

At 5:00am (yuck!), I woke up and got myself into the living room with my little 3lb weights. I turned Jillian back on and started from the beginning. Let me tell you, Jillian is tough! The reason the work out is only 20 minutes is because you don't get any time for a break. Since it's only 20 minutes, you're supposed to push yourself to do it and 'your body will adapt'. I did make it the whole 20 minutes, but I also had to take a few breathers here and there. I also broke a piece cartilage in my wrist a few years ago (or so the doctors think), so I couldn't do the push ups (it hurts my wrist too much). Instead, I subbed cobra and plank poses from yoga in where the 2 reps of push ups were.

All in all, I think I really like the 30 Day Shred. I ended tired, but not exhausted. Sweaty, but not overwhelmed. And I was sore, but not so sore that I wanted to collapse. The best part? It only took 20 minutes!

I've been trying to count my calories lately, too. Not every single one, but I try to stay under or as close to 1000 before I get done work for the day (this includes drinks, breakfast, snacks & lunch) and then I try to eat healthier in the evenings.

As of yesterday, I'm weighing in at 210.8 lbs. My goal by the time the wedding rolls around is 170 (even though I know this is a big long shot!), but I'd be ok with 180, I think. My long term goal is 130 (I was 110 from Senior Year of HS to Sophmore Year of college, then I jumped to 120 and stayed there due to my taking up yoga). Ideally, I would like to eventually fit into my size 4 wool coat again (which I fit in no problem 2 years ago).

Big Changes Are Coming

Big changes are happening in my life. The biggest being that we finally set a date for our wedding - July 24, 2010. It's going to be a very simple, quick ceremony on the beach. Over the weekend, we headed to LBI and found the PERFECT location.


We're on a very modest budget, so there isn't going to be a party afterwords, but we do plan on inviting everyone to spend the day at the beach with us. There won't be any walking down the aisle or bridal party, just simple vows on the beach.

It was also the Monster's first time on the beach. She loved it! She had a little trouble walking, but she took her brand new bucket and shovel and scooped that sand like a pro! She saw her first seashell, too. And she only tried to eat the sand once!


I think we'll be headed down the shore a lot this summer! I'm so glad that she had fun.

I also bought my first work out dvd - Jillian Michael's 30 Day Shred. I've been hearing rave reviews about it and it was on sale at Target for $8.50, so I figured it's worth a shot. We also got a scale (which I haven't seen in about a year) and I really shouldn't have because my weight is WAY higher than it has ever been. So I am praying that this dvd will help me get back into shape... at least a little bit!

White Wine, Lemon & Mushroom Chicken

J isn't really a big fan of chicken. In fact, he refuses to eat most chicken (or turkey or any other bird for that matter) especially if it's on the bone. In the last few months, I've taken to making new things for dinners and making him try them. Maybe that makes me a mean person, but I no longer trust when he tells me he doesn't like something. Why? He used to tell me all the time that he hates pot roast. One day we went to his mother's for 'steak' dinner and what was it POT ROAST! Now I make him try different foods because he can't possibly hate everything he says he does... and usually I'm right.

Natasha over at Samster Mommy posted a delicious looking recipe about a week ago for White Wine, Lemon & Mushroom Chicken that I absolutely had to try. It came out perfectly! I forgot to take pictures, but here's what hers looked like (borrowed from her blog):


Instead of asparagus, I made some steamed mixed veggies and instead of gnocci, I served scalloped potatoes. I also skipped the flour and butter that Natasha called for, so my sauce wasn't very thick. Here is how I made mine, with my changes (if you'd like to see the original recipe, please follow the link I posted earlier).

1 package fresh chicken breast, sliced into thin strips (I sliced my breasts in half and then into 1" strips)
1/2c - 1c dry white wine (I used Yellow Tail - Pinot Grigio)
1 package of sliced mushrooms (I got the big pack - we eat a lot of mushrooms)
1tsp garlic powder
1 fresh lemon, zested & squeezed
TIP: To get my lemon zest, I used a parring knife and scraped the yellow off the lemon peel (washed well) into a bowl.

1. Using the oil of your choice (I used vegetable because it's what I had on hand, Natasha used Olive), put a tiny dollop (about 1-2tsp) in your frying pan. Heat up on med-high. Add some lemon zest, salt and pepper to the bottom of your pan (or rub your chicken with it), place the chicken strips in the pan and top with lemon zest, salt & pepper. Cook about 4-5 minutes per side.
2. Remove chicken from pan and set aside. Add mushrooms and garlic to pan (and more oil, if needed. I used a non-stick pan, so I didn't need any) and saute for about 5 minutes (or until mushrooms are golden brown).
3. Add 1/2c white wine and your lemon juice to the mushrooms. Return chicken to the pan and cook until chicken is thoroughly cooked (I cooked mine for about an extra 10-15 minutes, but if you cooked your chicken more in step 1, this time could be less). Add more wine, if desired.
4. Enjoy!

The mushrooms came out so flavorful. I don't even like mushrooms, but these were excellent. And J even said he loved the chicken and that he'd eat it again!
