Mini Quiche + Super Easy Recipe

Last night I was stumped for what to make for dinner. After baking all week, I was pretty much cooked out and wanted something easy to make. That's when I decided these mini quiches would be perfect and they turned out delicious!

1/4 cup bisquick
3 large eggs
1 cup grated cheese
1 1/4 c milk
salt and pepper to taste
any desired mix ins (ie - broccoli, bacon, spinach, sausage, etc - make sure to pre-cook!)

1. Preheat oven to 375. Pre-cook your mix in (I used steamed broccoli). In a large bowl, mix all ingredients with a whisk or fork.
2. Spoon into greased muffin or cupcake tin (makes about 12 cupcake sized quiches). Bake for 15-17 minutes.

 3. Let cool for 2 minutes. Enjoy!

The best part about these is that you can mix up your batter, cover it and refrigerate it overnight! Then it's all ready for you to bake the next morning - PERFECT for early Christmas mornings. :) These would also make great hors d'oeuvres at a party.
